Putting on the finishing touches of a personal and customer-favorite confection, Gluten-Free Pepita Brittle!
Cooked sugar, pepitas, butter, and salt are all added to give it a yummy flavor. When added, the butter instantly melts, as this is cooking at 311 degrees. The very final touch is baking soda, which provides aeration so that each bite crumbles and melts in your mouth. I always stir until there are no white chunks, watching it expand and then pouring it onto a flat surface to cool. Then, I can add the best part...chocolate!
